What makes Istrian prosciutto special?

Istrian prosciutto is a traditional dry-cured meat delicacy produced through a careful process of salting, air-drying, and natural ageing in the Istrian region. Its distinctive character is shaped by the local climate, the bora wind, generations of craftsmanship, and strict production standards. To receive the Protected Designation of Origin (PDO) label, Istrian prosciutto must be produced in accordance with the official product specification and successfully pass inspections by an authorised certification body. Only then may it bear the official PDO mark, guaranteeing its authenticity, origin, and exceptional quality.
